Mamane

Mamane honey comes from the big island of Hawaii. Dark gold in color. In the raw I get delicate florals and a rich buttery character from the honey. We allowed this one to naturally ferment briefly before adding a blend of yeasts to finish the fermentation. Bold yellow color. Optically perfect clarity. On the nose I get apple and florals. After fermenting the honey flavors have really opened up. I get pineapple, fresh melon, citrus, guava and some honey crisp apple. Enjoy at room temp or slightly chilled.
