PHOSPHENOMENON (2022)

Ginger mead aged in bourbon and rum barrels for 11 months. Traditional aged in bourbon- and rum barrels, blended and aged on Peruvian ginger root that lends a sweet citrusy and spicy ginger flavor that integrates into the mead without stealing the show. A visual appealing, slighly hazy golden yellow color, with a thin green-hued veil. Aroma of fresh ginger, caramel, coconut, pineapple, honey and vanilla. Honey and barrel up-front, before the ginger hits you a couple of seconds into the flavor experience. Never overshadowing the deep notes of caramel and vanilla from the bourbon- and rum barrel-aging that melds together in this spicy, sweet and boozy concoction. Soft mouthfeel throughout, with notes of butterscotch and fluffy custard that lingers in the finish. Feel free to turn the bottle a couple of times before opening, to resuspend all the ginger goodness. Serve with a fresh slice of orange zest if you dare. -------------------------- 2022 -------------------------- Barrel origin: Buffalo Trace bourbon (11 months aging) Very old Plantation rum from Barbados (11 months aging) *These barrels originates from around the 90's. They were used to make whiskey by Willowbank Distillery before they were shipped to Barbados to further age rum.
